In his kitchen, no books, no recipe book, no scales, just instinct, curiosity and lots of unexpected associations.

Conversely, the restaurant room was designed to be reassuring, warm, very simply, like its character in intimacy. In winter, to the sound of the crackling fireplace and in summer in the veranda, letting in every ray of sunshine, every breath of air from the village of Ustaritz.

He wanted it like that, like at home, to welcome you once again as close as possible to the raw materials, the wood of the exposed beams and the tables of our carpenter, the stone of the walls, the metal forged in the image of his grandfather.
